Classified Under: Sauces, Seasonings, & Pastes Wikipedia Entry Soy sauce is a key ingredient in Korean cooking. It's used to season vegetables (namul), soups, marinades, and more. I typically use Jin-Ganjang or Yangjo-Ganjang by Sempio brand as they are the gold standard for soy sauce in Korea. Typically Jin-ganjang is a soy sauce better used for dishes that require heating - such as BBQs or stir fries. On the other hand, Yangjo-ganjang is better used for dishes that don't require heat such as seasoning vegetables or making salad dressings. Ideally, you should have both but if you had to choose one all-purpose soy sauce, choose Yangjo-Ganjang (양조간장) - which is a naturally brewed soy sauce. Sempio's Yangjo-Ganjang comes in two levels. "501" and the "701." I've read many reviews by Korean home cooks, and they overwhelmingly recommend the "701" over the "501," claiming that the 701 has a much richer flavor. So invest accordingly. Sempio's Jin-Ganjang comes in three levels. "Jin S" is the most economical, "Jin Gold S" is the next best, and "Gold F3" is the absolute best. I recommend getting at least the "Jin Gold S" (pictured below) or the "Gold F3." They're only a dollar or two more expensive so invest in the better one!
