English Name: Mirin Korean Name: 미림 Romanized: Mirin, Mirim Other Names: 맛술 (mat suel) Storage: Keep in cool, dark area. Classified Under: Sauces, Seasonings, & Pastes Wikipedia Entry Mirin is a sweet and slightly salty cooking alcohol that is commonly used in Japanese cuisine. It's used in various sauces to provide deeper, complex flavors. I like using Kikkoman brand but Lotte also makes mirin as well. If you don't cook with alcohol, simply replace it with water and a little bit of sugar.
