Mirin is a sweet and slightly salty cooking alcohol that is commonly used in Japanese cuisine. 

It's used in various sauces to provide deeper, complex flavors. I like using Kikkoman brand but Lotte also makes mirin as well.

If you don't cook with alcohol, simply replace it with water and a little bit of sugar.
