Dried shitake mushrooms are a key ingredient in making Korean vegan vegetable stock. It adds a deep umami flavor along with kelp. When making broth, you must used dried as the drying process brings out a deep flavor not present in fresh mushrooms. 

Fresh shiitake mushrooms are used to make stir fries and soups.

Dried/Fresh Shitake mushrooms are easily found in Korean, Japanese, and Chinese grocery stores.
