When a Korean recipe calls for sesame seeds, it's always toasted sesame seeds. Not untoasted or raw.
However, when you buy toasted sesame seeds, you never know when it was toasted. Thats why it's better to buy raw sesame seeds and toast them yourself. Toasting sesame seeds yourself really brings out the nutty flavor and compliments dishes very well. You can learn how to toast sesame seeds here. If you have toasted sesame seeds, you can toast them again by using the same method.
If you're lazy, it's completely fine to buy toasted sesame seeds at the store. No worries! Buy them in larger packages for better prices.
